Basic muffins

This muffin recipe is the one my Grandma Betsy would always whip up in addition to dinner. I’m not sure where she got it, but it’s just a really simple recipe that can be taken in any direction. Possible additions include extra sugar and cinnamon for something sweeter, any kind of chopped nuts, seeds, fruit, chocolate chips, whatever you want in a muffin, this recipe can give it to you! (The ones pictured above have poppy seeds just because I happen to have some laying around.)
- 2 cups flour
- 1/3 cup sugar
- 3 tsp. baking powder
- 1/2 tsp salt
- 2 eggs
- 1/4 cup melted butter
- 3/4 cup milk
- 1 tsp vanilla
Preheat oven to 400 degrees. Grease a muffin tin. Mix dry ingredients with a wire whisk. Beat eggs, butter, milk, and vanilla. Add gradually to dry mixture, enough to moisten everything. Fill muffin pan 2/3 full and bake for 20 minutes. The tops should be brown and slightly cracked, and a toothpick should come out clean. See? Easy and oh so yummy!
