Orange Avocado Salsa

This salsa recipe is originally from Martha Stewart’s Everyday Food, and I really haven’t changed it much, or at all. You can find a photo and the original recipe here. I apparently can’t get my act together to take a photo these days. Anyways, here’s the delicious recipe, good on many things: chicken, white fish, pork, or just mixed in with rice or as a taco topping - go wild!

  • 1 large, ripe avocado, peeled, pitted, and diced (Martha says to only use half, but I think definitely use the whole thing - what are you going to do with that other half anyways?)
  • oranges, peeled and cut into bite-sized pieces
  • 1/4 cup diced red onion
  • 2 Tbsp lime juice
  • 1 tsp honey
  • salt and pepper

Mix together the avocado, oranges, and red onion in a bowl. In a separate bowl, combine the lime juice and honey until the honey is pretty much dissolved. Mix the honey mixture into the rest of the ingredients, season with salt and pepper. The next time I make this, I plan to add some cilantro, because I think it would add a nice touch. You could also add some diced jalapeno or add some heat in some other way; I think the coolness of the orange and the avocado would go well with a little more spice.
